Here is the problem:
The movie isn't anamorphic after all. It just thinks it is, so everything is squeezed down by 22%. This is fine if you want to see Charlton Heston as a fat knight whosaves Spain. If not...

Here is how you fix it:
If you don't already have it, download and install DVD-Rebuilder. It is free and you get it at:

DVD-Rebuilder will also install avisynth and HCencoder on your computer. Configure DVD-RB (=DVD-Rebuilder) to use HCencoder (in the Mode menu) and set HC quality to best (in the Settings menu).
(You can also use CCE to encode movies if you have it, but it isn't free, it isn't better, and it takes longer, but there's nothing to stop you if you want to...)

Next, download a filter called TomsMoComp at:

and extract it to avisynth's plugins folder (..Program FilesAviSynth 2.5plugins).

Now, load El Cid in DVD-RB and turn on the 'Convert from LB 4:3 to 16:9' option. This will fix the aspect ratio problem.

Unfortunately there will an ugly doubling of lines in the image, but TomsMoComp will get rid of those!
In DVD-RB's filter editor, enter:
TomsMoComp(-1,5,1)
