ElUser - To answer my own question.
On checking Apples specifications for the iPod, it only supports up to 640x480 video resolution.
I will upload my H.264 video at 640x360 (16:9)

I don't know. We use Zune, and sometimes watch on the 360.
No limitations that I am aware of. The higher resolution would work fine for me.
